Piatti tipici: Baccalà alla fiorentina - Firenze in Toscana
Il baccalà è uno dei pesci più usati nella cucina fiorentina. Si tratta di filetti di merluzzo conservati sotto sale e poi "ammollati" cioè messi a bagno, spesso in acqua corrente poco prima di essere consumati. Le drogherie fiorentine lo vendono anche già "ammollato" e pronto per la cottura.
Il baccalà è nella cucina tradizionale di Firenze un piatto tipico del venerdì, giorno di vigilia, in quanto pesce gustoso e poco costoso. Viene preparato in molti modi: bollito, in zimino, fritto, ma la ricetta più tipica e comune è con il pomodoro: "alla fiorentina" appunto.
